Mini pea frittatas recipe

Who doesn’t love a frittata? Full of eggy goodness and the simplest thing to make in the world!

Here is a recipe I tried this week and they are delicious.

Mini pea frittatas

Ingredients 

  •  6 medium egg(s)
  •  1/4 cup(s) light thickened cream
  •   3/4 cup(s) frozen peas, boiled, thawed
  •   2 individual green shallots, thinly sliced
  •  50 g reduced-fat feta cheese, crumbled
  •   1/4 cup(s) fresh mint, finely chopped

Method

  • Preheat oven to 200°C or 180°C fan-forced. Lightly spray two 12-hole (1 tablespoon/20ml capacity) mini muffin tins with oil.
  • Whisk eggs and cream in a large jug. Season with salt and freshly ground black pepper. Add peas, shallots, feta and mint and stir to combine. Pour mixture into prepared tin holes. Bake for 15–20 minutes or until golden and cooked through. Serve warm or cold.

Tip: I have put them in wee zip-lock bags and frozen individual portions so when I feel like something I bring out some mini frittatas.

Power outage this Saturday

Anyone planning to come in to campus this Saturday 18 April, is best to hold off until after 11.30 am. There’s a series of power outages planned to sort out the 11KV upgrade and most buildings will be affected at some time  between 7.00 am and 11.30 am. It’s all in a good cause to ensure the robustness of the upgrade and to test the emergency power supply to certain areas of campus. Please pass this info onto anyone else you think may be coming in on the weekend.

Home made Muesli

We LOVE breakfast at my flat and muesli is collectively our favourite breakfast food!  Here’s  how to make your own home batch in just five steps.

INGREDIENTS:

1. Rolled oats
2. Honey
3. Cooking oil
4. Mixed nuts

METHOD:

1. Pour 4 cups of rolled oats into a baking tray.

2. Add half a cup of oil to oats and mix well.

3. Add half a cup of honey to oats and mix well.

4. Add a handful of mixed nuts to the tray.

5. Place the baking tray to cook into a pre-heated oven at 180 degrees Celsius for 20 minutes or until the oats are roasted well.

And there you go, that’s a week’s worth of breakfast/breakfast for five in just 20 minutes!

 

TIPS:

1. Heat oil and even honey if needed for 30 seconds in order to make it easier to mix with oats.

2. Make sure to stir the oats every five minutes in order to avoid them from sticking together.

3. If you’re short of time, follow the same steps by reducing the serving size and cooking it in a on a stove top in a pan!
